What to Eat in Guizhou

Sour Fish Soup (酸汤鱼)

Si Wa Wa (Vegetarian Spring Rolls) (丝娃娃)

The main ingredient of Si Wa Wa is fine flour, which is used to create a thin and delicate wrapper. This wrapper is then filled with a variety of fresh and crunchy vegetables, including bean sprouts, seaweed shreds, pickled radish, zhe'er'gen (a type of pickled vegetable), lettuce shreds, and fried yellow beans. Chang Wang Noodles (肠旺面)

Add soy sauce, vinegar, green onion, mung bean sprouts, fried tofu cubes, etc., and finally pour chili oil on the noodles.

Guiyang Stir-fried Spicy Chicken (贵阳辣子鸡)

The chicken is first marinated with a blend of spices that includes ginger, garlic, and soy sauce, allowing the flavors to penetrate deep into the meat. Then, it is stir-fried with an abundance of chili peppers and Sichuan peppercorns, creating a dish that is both spicy and fragrant.

Mutton Vermicelli (羊肉粉)

Mutton Vermicelli is a famous traditional pasta snack in Zunyi City, Guizhou province. It is cooked with fresh mutton soup, poured with rice flour, and served with mutton slices and seasonings.

Bean Curd Noodles (豆花面)

The dish's signature ingredient is the bean curd, or "douhua" in Chinese. The bean curd is served atop the noodles, creating a contrast in textures. A dish of chili sauce is another key element of Zunyi Bean Curd Noodles. Each restaurant or household has its unique recipe, but typically, the chili sauce is a blend of chili oil, garlic, ginger, minced pork, diced chicken, peanuts, beancurd skin, and other spices that add flavor to the dish.

Rice Tofu (米豆腐)

Rice Tofu, also known as "Mi Doufu" in Chinese, is a traditional snack that is made with fresh rice as its primary ingredient. These can include chopped scallions, minced ginger, garlic water, yellow beans, pickled vegetables, soy sauce, vinegar, and a final drizzle of spicy chili oil. The Miao people in Guizhou province have their own unique cuisines, and Miao sour pork is undoubtedly one of the best. This dish marinates pork in a secret sauce made from glutinous rice and sour liquid, presenting a unique sour and fragrant flavor.
