Three-cup chicken is a traditional and flavorful signature dish from Ganzhou, Jiangxi Province, China, and it is also one of the representatives of Gan cuisine. The dish has a long historical origin and is associated with the national hero Wen Tianxiang in the late Southern Song Dynasty. Legend has it that when Wen Tianxiang was captured by the Yuan Dynasty, an old lady from Jiangxi, upon hearing the news, brought a chicken and a pot of wine to visit him in prison. With the help of the jailer, the old lady braised the chicken with rice wine, soy sauce, and oil, expressing her admiration and nostalgia for Wen Tianxiang.
